Is there an option where it will count them down to start the next stage? Either to start on the next whole minute or a 20 second count down?

there is no countdown which will end the current element and start the next one. Players can always solve each element at there own pace. However there is a time limits which can be set for all answer types. If you use time limits, players will lose points if they take too long.
